Fixes some docs issues with using single-dash arguments where they should be double
I found a bunch of issues where we have "-<opt>" instead of "--<opt>". Also a couple of other issues, like "-notrunc", which is now "--no-trunc" Fixes #5963 Docker-DCO-1.1-Signed-off-by: Brian Goff <cpuguy83@gmail.com> (github: cpuguy83)
