Now client have the possibility to set the console size of the executed
process immediately at the creation. This makes a difference for example
when executing commands that output some kind of text user interface
which is bounded by the console dimensions.

This enables image lookup when creating a container to fail when the
reference exists but it is for the wrong platform. This prevents trying
to run an image for the wrong platform, as can be the case with, for
example binfmt_misc+qemu.

The goal of this refactor is to make it easier to integrate buildkit
and containerd snapshotters.
Commit is used from two places (api and build), each calls it
with distinct arguments. Refactored to pull out the common commit
logic and provide different interfaces for each consumer.

This PR has the API changes described in https://github.com/moby/moby/issues/34617.
Specifically, it adds an HTTP header "X-Requested-Platform" which is a JSON-encoded
OCI Image-spec `Platform` structure.
In addition, it renames (almost all) uses of a string variable platform (and associated)
methods/functions to os. This makes it much clearer to disambiguate with the swarm
"platform" which is really os/arch. This is a stepping stone to getting the daemon towards
fully multi-platform/arch-aware, and makes it clear when "operating system" is being
referred to rather than "platform" which is misleadingly used - sometimes in the swarm
meaning, but more often as just the operating system.
When plugins have a positive refcount, they were not allowed to be
removed. However, plugins could still be disabled when volumes
referenced it and containers using them were running.
This change fixes that by enforcing plugin refcount during disable.
A "force" disable option is also added to ignore reference refcounting.

Implement configurable detach keys (for `attach`, exec`, `run` and
`start`) using the client-side configuration
- Adds a `--detach-keys` flag to `attach`, `exec`, `run` and `start`
commands.
- Adds a new configuration field (in `~/.docker/config.json`) to
configure the default escape keys for docker client.
